This should be an easy one - I'm just missing something simple, I'm sure.

I have a header and want a nested, centered horizontal menu.

That's not hugely tricky, this should work:

#parent_ul {
width: 80%;
text-align: center;
margin: 0 auto;

#parent_ul > li {
display: inline; /* or inline-block */
